Veggie Parcel Recipe

Tip: It is best to prepare and cook your veggie parcel before you cook your meat because the veggie parcel will keep warm in the tinfoil that it is cooked in whilst you are cooking the meat... and the whole meal will then be ready to eat as soon as the meat is cooked.

Ingredients

Vegetables that are available cut into blocks or slices. Blocks should not be too large otherwise they won’t easily cook through. Slices can be thick (7-10mm). Common veggies used:


  • Potatoes (sliced, quartered or baby potatoes whole)

  • Carrots (sliced, julienned, slabbed)

  • Peppers (sliced)

  • Onions (sliced, wedges, whole baby onions)

  • Mushrooms (halved, whole or sliced)

  • Snap peas (whole)

  • Butternut (15-20mm blocks are best)

  • Baby marrows (sliced)

  • Patti pans (halved or whole)

  • Garlic (crushed or whole cloves – usually about 3 – 4 cloves per parcel, but to taste)

  • Red chilly (finely diced) for those that like some heat

  • 2 Tbsp butter

  • Salt, Pepper, herbs and spices to taste


Method

  • Prepare the veggies (enough to cover an area no more than 30cm x 30cm x 10cm deep)

  • Place all the veggies in a bowl and add whatever seasoning you wish according to taste

  • Mix all the veggies and seasoning together and then place them onto a piece of tin foil (shiny side facing in towards the veggies) large enough to cover them completely.

  • Place the 2 Tbsp butter in 4 separate blobs on top of the veggies and then fold the extra foil over the top of the veggies to seal the parcel completely.

  • Place this parcel upside down onto a second piece of tin foil the exact same size (shiny side facing inwards towards the veggies) and fold the edges in to seal the parcel.

  • Flip the parcel back over so that the butter is still on the top of the double-foil parcel and place the parcel directly onto the hot coals of the DuoKwik and allow to cook for 20-25 minutes.

  • After 20 minutes, remove the parcel from the coals using flat metal tongs, being careful not to puncture the foil in the process.

  • Shuffle the coals with the tongs to clear any dead ash coating and then return the parcel to the coals upside down to cook the other side for 20-25 minutes.

  • Remove the parcel from the coals and place it in a safe, preferably warm, place until the meat has been cooked.

  • Open the parcel just before serving
